Nutty Sweet Potato Wedges image

Sweet potatoes get a dip in a mixture of dry roasted peanuts, pepper and egg white. Voilá! 35 minutes later, you're enjoying nutty sweet potato wedges!

1/4 cup dry roasted peanuts, chopped
1/8 tsp. black pepper
1 egg white
1 sweet potato (8 oz.), cut into 8 wedges

Steps:

  • Heat oven to 350°F.
  • Mix nuts and pepper on plate. Beat egg white lightly in shallow dish.
  • Dip potato wedges into egg white, then into peanut mixture, turning to evenly coat all sides. Place in single layer on foil-lined baking sheet.
  • Bake 30 to 35 min. or until potatoes are tender.
