SALMON BAKED WITH BRAZILIAN RUB image

Number Of Ingredients 9

4 Salmon fillets, 5-6 oz. Each
Juice of .5 large orange
Juice of .5 large lemon
Salt and pepper to taste
1 heaping tablespoon of grated orange peel
2 TBLSPoons Brown Sugar
1 Tablespns Chili powder
1 large garlic clove, minced
2 TBLSpn butter melted

Steps:

  • In shallow 9X14 casserole dish combine the juices, salt and pepper. Add salmon to marinade. Turn to coat. Marinate for 20 minutes at room temp. turn fillets once. 20 min more marinate. Preheat ove to 425 degrees. Line a shallow baking pan with aluminum foil and grease with a little of the melted butter. In a small dish combine the orange rhine and borwn sugar, chili pwder and minced garlic. Rub the marinated salmon with the borwn sugar mixture. Place in pan and drizzle with remaining butter. Bake 8-12 min. Or go for 17 minutes for fully done.
