SAUSAGE & PEPPER SANDWICHES image

Yield 4 sandwiches

Number Of Ingredients 9

4 uncooked sweet (mild) Italian sausage links (about 1 pound)
1/2 cup water
1 Tbsp cooking oil
1 cup green sweet pepper, cut into strips (1 medium)
1 cup red pepper, cut into strips (1 medium)
1 large onion, sliced and seperated into rings
1/4 cup Italian salad dressing
1 Tbsp dijon style mustard
4 hoagie rolls

Steps:

  • In a large skillet cook sausage links over medium heat about 5 minutes or until brown, turning frequently. Carefully add water. Bring to a boil and reduce heat to low and simmer covered for about 5 minutes. Uncover and cook sausages, turning frequently until liquid evaporates and sausages are cooked through (160 degrees internal temp). Watch carefully not to burn sausages. Place sausages on a paper towel and wipe out skillet if necessary. In the same skillet, add the oil, green and red peppers and onion. Cook and stir about 5 minutes or until vegetables and crisp tender. Return sausages to the skillet. Combine dressing and mustard in a small bowl. Add mixture to the skillet, stir to combine and heat through. Hollow out bottoms of hoagie rolls and toast if desired. Place sausages on the roll and top with with peppers and onions. If desired, add a slice of mozzarella cheese on top of the vegetables and melt under a broiler.
