SALMON AND VEGETABLES IN PARCHMENT image

Number Of Ingredients 12

4 medium fillets of salmon,
8 handfuls of fresh baby spinach,
2 cucumbers julienned,
1/2 cup dried cranberries or cherries,
1 chopped parsnip,
1/2 cup julienned carrots,
Chateau St. Michelle Pinot Grigio,
Fresh minced garlic,
1 quartered lemon,
heavy cream,
fresh parsley and thyme
Special Item: parchment paper

Steps:

  • Fold the parchement paper like a cream cheese wrapper, rolling up the sides but keeping the top open. Place a salmon filet in each wrapper. Mix the vegetables and divide into each wrapper. Sprinkle each with a bit of fresh minced garlic and the juice of a quartered lemon. Top it with a dash of wine and herbs. sprinkle just a tiny bit of cream. Seal the top of the package and bake at 400 degrees until fish is cooked through, about 20 minutes in electric oven.
