SALMAGUNDI BAKE (MEXICAN CASSEROLE) image

Number Of Ingredients 9

3/4 c long grained rice
14 oz can tomato sauce
3/4 c hot water
1 c chopped onion
1/2 c chopped green pepper
1 pound lean ground beef
12 oz can corn, drained
3 tsp chili powder
bacon strips (optional)

Steps:

  • Spread uncooked rice in bottom of a large covered baking casserole dish. Sprinkle with salt and pepper to taste. Pour 3/4 c of the canned tomato sauce evenly over the rice, then pour the hot water over the sauce. Sprinkle onions and peppers over the rice base. Crumble beef over the vegetables and pat down lightly. Sprinkle beef with salt to taste. Spread drained corn over beef. Combine remaining tomato sauce with chili powder, and spread evenly over corn. Top with strips of bacon if desired. Bake covered with casserole lid at 375F for 1 hour. Remove cover and bake an additional 15 minutes.
