RUSSIAN COLE SLAW image

Typically the Russian idea of a salad isn't what we Americans would call a salad. It may be a dish of fruit, or a dish of vegetables--what we might call a side dish. 5 c finely shredded cabbage
2 medium apples
1 small carrot
1 tsp minced onion
1 tsp minced dill or parsley
2 Tbsp mayonnaise
1 tsp sugar
1/2 c sour cream

Steps:

  • 1. Sprinkle the shredded cabbage with salt and let stand 15 minutes, then scald for 3 minutes. Drain well and dry in a towel.
  • 2. Chop the apples very fine or grate them on a coarse grater. Grate the carrot.
  • 3. Mix all the ingredients together and let stand 30 minutes on ice (or in refrigerator) before serving.
