Thin sliced sirloin or top round (cut out fat); top round is bigger and easier to handle but not quite as tasty
German small dill pickles
Sautéed onions (3-4)
Salt and pepper
Dijon mustard
Slab bacon (Kunzer at Giant)
Tomato wedges
Beef stock (Pacific organic)

Steps:

  • Lay out meat and spread with mustard thinly and season top side Add 3-4 pickle strips Add strips of bacon Add sautéed onions (dont be skimpy on these) Add 2 thin wedges of tomatoes Roll up and tuck in the ends and use thread to wrap Brown in olive oil - don't overdo. Just to get color and flavor for gravy. Do in batches-don't crowd! Put Rouladen in pot with 1/2-1 cup of broth - just need a little liquid on the bottom Cook for 1/2 hour and then turn over; cook another 1/2 hour - no more 1 1/2 hours total. Take out and let them cool off; remove string Put remainder of beef broth in pot and cook down; add flour to thicken (mix flour with cold water first) Strain the gravy Put roulades back in and heat and serve! Can add a little tomato paste is no tomatoes are used; also a little heavy cream is good.
