Romaine and Zucchini Salad image

Number Of Ingredients 9

4 cups shredded Romaine lettuce
2 small zucchini, cut crosswise into thin rounds
1 large tomato, chopped
1 tablespoon chopped flat-leaf parsley
2 tablespoons olive oil
2 teaspoons white wine vinegar
1/2 teaspoon salt, or to taste
1/8 teaspoon freshly ground pepper, or to taste
2 to 3 tablespoons , crumbled queso, fresco (fresh Mexican cheese)

Steps:

  • In a large salad bowl, combine romaine, zucchini, tomato, and parsley. In a small bowl whisk together the oil, vinegar, salt, and pepper. Pour over the salad and toss gently to coat.
