Roated Asparagus & Vidalia Onions image

Everyone who has tasted this combination veggie LOVES it and request it again and again. This is a FAVORITE with my family and friends. I will update my photo after i actually remember to take a photo of the dish while Im preparing and cooking. sorry had to use stock photos.

Number Of Ingredients 6

2 bunch(es) small firm asparagus (not wilted)
1 teaspoon(s) crushed garlic
1 medium vidalia onion
1/2 teaspoon(s) crushed black pepper
3/4 teaspoon(s) sea salt (optional)
1/4 cup(s) extra virgin olive oil

Steps:

  • wash Asparagus cut up to 1 inch off bottom of stalks and discard
  • cut the stalks in half and toss in bowl
  • peel and cut the Vidalia in half then slice each half into 1/4 strips and toss into bowl with Asparagus
  • add the other ingredients (Garlic, Oil, salt & pepper)and toss into the bowl with the Asparagus and Onions. Toss entire contents until coated well.
  • Pour bowl contents onto a deep wide bread pan and spread out onto pan. Place into oven set to BROIL. Broil for about 10 minutes at a time stirring in between until it is roasted and onions appear slightly translucent.
  • Remove from Oven and using tongs or spatula, place the contents into a serving dish and Serve. You can add Lemon juice to your serving if you like.
