ROASTED STUFFED PEARS image

Ingredients
4 pears
4 oz. goat cheese
4 Medjool dates, chopped
1 TBSP honey
1/4 cup pecans, chopped
dash of cinnamon
1/2 cup apple juice (or sparkling apple cider)

Steps:

  • Preheat oven to 375* F. Slice pears in half lengthwise. Remove core using a melon baller. In a bowl, mix all ingredients except the pears and apple juice. Stuff pears with cheese mixture. Place pears in a baking dish and carefully pour apple juice into the dish forming a shallow bath. Cover with aluminum foil and bake for 20 minutes. Serve warm.
