Roasted Garlic Mashed Cauliflower image

This is my Low Carb version of my Roasted Garlic Mashed Potatoes. The cauliflower is a terrific substitute! A must try. Cooking with Passion, sw:)

Number Of Ingredients 8

1 large head cauliflower
1/2 stick butter, unsalted
1/4 c olive oil, extra virgin
1/4 c heavy whipping cream
2 Tbsp italian parsley, chopped
1 large head of garlic, roasted**cut the top of the garlic off, add some evoo, put in aluminum foil and bake for 30 minutes or so..until soft, squeeze garlic out.**
1 Tbsp greek seasoning or favorite seasoning salt
1 tsp black pepper, course

Steps:

  • 1. pick out a large firm head of cauliflower
  • 2. break cauliflower head into florets
  • 3. boil cauliflower florets in a large pot of salted water for 15 minutes or until fork tender. drain in a colander
  • 4. in a large mixing bowl combine cauliflower and other ingredients. with an immresion blender or hand mixer whip cauliflower until creamy. you may also put cauliflower in a blender to puree
  • 5. bowl up and serve!
