ROASTED FISH WITH ARTICHOKES image

2 lg. red onion, cut inot 1/4" wedges
2 tbsp EVOO
1 pkg. (10 oz.) frozen artichoke hearts, thawed
1 c small cherry or grape tomatoes
2 tbsp chopped parsley
1 tsp grated orange zest
1 clove garlic minced
4 skinless flounder or other fish filets (4-6 oz.)

Steps:

  • Preheat oven to 400F. Combine onions and oil in 13x9" baking dish. Spread in even layer. Roast until onions are golden, about 35 minutes. Remove from oven, stir in artichokes and tomatoes. In small bowl, mix parsley, orange zest and garlic. Set aside. Increase oven temp to 450F. Push vegetables to one side of dish and add fish. Spoon vegetables over fish. Return to oven and roast until fish is opaque in center, 5 minutes for thin filets and 12 or so for thick.
