ROASTED CORN CHOWDER WITH POTATOES AND BACON image

Number Of Ingredients 8

3 ear corn, husked
3 bacon slices, diced
3/4 cup onion, finely chopped
1 tbp butter
1 1/2 tbp flour
2 cups chicken stock
1 large russet potato, peeled, diced
3/4 cup half and half

Steps:

  • Grill corn on barbecue about 15 minutes. Cut kernels from corncobs. Saute bacon over medium-high heat for about 4 minutes. Add onion and butter and saute about 10 minutes. Sprinkle with flour and stir 2 minutes. Gradually mix in broth. Add potatoes and simmer 10 minutes. Stir in corn and half and half. Simmer about 20 minutes. Season with salt and pepper.
