Roasted Butternut Squash Soup and Curry Condiments image

Number Of Ingredients 12

4 pounds Butternut Squash
3 Yellow Onions
3 McIntosh Apples
4 tablespoon Olive Oil
1 dash Kosher Salt
1 dash Ground black pepper
3 cups Chicken Stock
1 teaspoon Curry Powder
1 bunch Scallions
1 dash Flaked sweetened coconut, lightly toasted
1 dash Roasted salted cashews, toasted and chopped
1 dash Banana diced

Steps:

  • Preheat oven to 425
  • Peel and cube butternut squash, apples and onions into 1 inch squares
  • Place squash, apples and onions onto a baking sheet in a single layer
  • Drizzle with olive oil, salt and pepper and toss until coated.
  • Roast in oven for 30-40 minutes.
  • Put into food processor and add chicken stock.
  • heat and top with coconut, cashews and bananas.
