Roasted Asparagus Sandwich with Tarragon Mayo image

Simplicity is often the best approach, as showcased in this straightforward sandwich. Quick-roasted asparagus is cushioned between two slices of warm bread that have been coated with Parmesan cheese and tarragon-flavored mayonnaise.

4 slice whole-grain artisan bread
or texas toast
4 Tbsp parmigiano-reggiano cheese
18 sprig(s) asparagus, fresh
3 Tbsp olive oil, extra virgin
salt and pepper, to taste
MAYO
2 Tbsp mayonnaise
3/4 Tbsp tarragon
1/2 Tbsp green onion, sliced

Steps:

  • 1. Top 4 slices whole-grain artisan bread with grated Parmigiano-Reggiano cheese;(or can use the Texas Toast) place on rimmed baking sheet. Arrange asparagus around bread; brush with extra-virgin olive oil. Broil 1 to 2 minutes or until cheese is melted and bread is lightly toasted; remove bread. Continue broiling asparagus 1 to 2 minutes or until crisp-tender.
  • 2. Meanwhile, combine 2 tablespoons mayonnaise with 3/4 tablespoon chopped fresh tarragon and 1/2 tablespoon sliced green onion. Spread over un-toasted side of two slices of bread. Top with asparagus; sprinkle with coarse sea salt and pepper. Top with remaining bread, Parmesan-side up.
