ROAST SALMON WITH WHOLE-GRAIN-MUSTARD CRUST image

1/8 cup whole grain mustard
1/2 Tb olive oil
1/4 cup minced chives
Two 5 ounce salmon filets Skin on
Fresh pepper

Steps:

  • 1. Preheat oven to 400. Have pan about 6 inches from broiler heat. Line baking pan with foil. In a small bowl stir together the mustard, olive oil and chives. 2. Season the salmon with pepper and place skin side down on baking sheet. Spread the mustard mixture over the top of the salmon. Roast for 6 minutes less if salmon thinner less than 1 inch. 3.Remove fish and preheat broiler. Broil 6 inches from heat about 4 minutes till mustard browns. Using a spatula remove the filets carefully and skin will stick to foil. Serve drizzled with olive oil if desired.
