Steps:
- 1. Remove tenderloin 45 minutes prior to cooking. Nick the silver skin on the side opposite the tip at 1 1/2 inch intervals. Tuck tip end under and tie. 2. Preheat oven to 425. Set meat on sheet of plastic wrap and rub all over with oil . Sprinkle with salt and pepper Lift plastic wrap up and around meat to press on excess. 3. Transfer prepared tenderloin to wire rack in roastin pan. Cook until thickest part of roast is 125 degrees - about 45 min. Let stand for 30 minutes before cooking. 4. Cut into 1/2 inch slices and serve.
