3 c all-purpose flour
1 Tbsp sugar
2 tsp baking soda
1 tsp salt
1 c low-fat buttermilk
1/2 c natural applesauce
2 Tbsp butter, melted
1/2 c raisins, optional
2 Tbsp milk

Steps:

  • 1. Preheat oven to 375 degrees. Spray an 8 inch round cake pan with cooking spray.
  • 2. In a large bowl, combine flour, sugar, baking soda, and salt.
  • 3. In a small bowl, combine buttermilk, applesauce, and butter.
  • 4. Add applesauce mixture to flour mixture.
  • 5. Stir until mixture forms a ball.
  • 6. Turn out dough onto well-floured surface; knead in raisins. If not adding raisins, knead 10 times.
  • 7. Pat dough into a 6" round.
  • 8. Place dough in prepared pan. Cut a cross in the top of the dough, 1/4 inch deep, with the tip of sharp knife.
  • 9. Brush top of dough with milk.
  • 10. Bake 35 minutes or until a toothpick inserted in center comes out clean.
  • 11. Cool in pan 10 minutes. Invert onto wire rack; turn right side up. Cool completely before slicing.
