Rice Pilaf With Pasta image

A basic rice pilaf that even the pickiest eaters will love. From the smallest of toddlers to your elderly neighbors, this recipe will please them all with basic ingredients right from your pantry. 1/4 c butter
1 c long grain rice
1/2 c tiny pasta (orzo) or spaghetti broken into 1 inch lengths
2 3/4 c chicken broth (i like to use "better than bouillon"
1 Tbsp dried parsley
1/2 tsp onion powder
1 tsp garlic powder
2 medium carrots, finely chopped
3 clove garlic
1 medium onion
1 pkg toasted almonds
1/2 tsp salt
1/4 tsp freshly ground pepper

Steps:

  • 1. Melt butter in a large, deep skillet or Dutch Oven.
  • 2. Add rice, pasta, carrots and onions and saute until onion is soft and rice begins to turn golden brown. Add garlic during last minute.
  • 3. Stir in broth, salt, pepper, garlic powder and onion powder.
  • 4. Cover and simmer on low for approximately 20 minutes until liquid is absorbed. Add parsley and check seasonings. Sometimes you have to add more salt depending on how salty your chicken broth is.
  • 5. Place in serving dish and top with toasted almonds right before serving.
