PORK 'N' POTATO DINNER FOR 2 image

I think I got this recipe from Taste of Home many years ago. One of my favorites. The recipe is for 2 servings but can easily be doubled. The addition of parmesan cheese & lemon juice gives this a whole new flavor. This comforting meal-in-one skillet dish is a delicious down home dinner.

2 bone-in pork loin chops, 1" thick
1 Tbsp all purpose flour
1 Tbsp vegetable oil
2 Tbsp plus 1-1/2 tsp. grated parmesan cheese, divided
1/8 tsp pepper
2 medium potatoes, thinly sliced
1 medium onion, thinly sliced
1 tsp beef bouillon granules
1/2 c boiling water
1-1/2 tsp lemon juice

Steps:

  • 1. Coat pork chops with flour. In a skillet over medium high heat, brown chops in oil on both sides. Combine 1 Tbsp. Parmesan cheese & pepper; sprinkle over chops. Arrange potato & onion slices over chops. Sprinkle with 1 Tbsp. Parmesan cheese.
  • 2. Dissolve bouillon in boiling water; stir in lemon juice. Pour over chops. Sprinkle with the remaining Parmesan cheese. Cover and simmer for 18-22 minutes or until meat juices run clear.
