RIBBON PUMPKIN BREAD image

For filling:
6 ounces cream cheese, softened
1/4 cup sugar
1 TBSP flour
2 egg whites
For bread:
1 cup pumpkin
1/2 cup unsweetened applesauce
1 egg
2 egg whites
1 TBSP oil
1 2/3 cups flour
1 1/4 cups sugar
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ground cloves
1/3 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees. For filling: Combine cream cheese, 1/4 cup sugar, 1 TBSP flour, and 2 egg whites in a bowl. Set aside. In a mixing bowl: Beat pumpkin, applesauce, 1 egg, 2 egg whites, and oil. In a separate bowl: Combine 1 2/3 cups flour, 1 1/4 cups sugar, baking soda, salt, cinnamon, and ground cloves. Add flour mixture to pumpkin mixture. Stir in chopped walnuts. Divide 1/2 of the batter between 2 greased loaf pans. Spread with filling; top with remaining batter. Bake for 40-45 minutes.
