Rhubarb Cream Delight image

You'll find this rhubarb dessert is very easy to make and the taste is just out of this world.

CRUST INGREDIENTS
1 cup(s) all purpose flour
1/2 cup(s) butter, cold, cut into small chunks
1/4 cup(s) sugar
RHUBARB FILLING
1 tablespoon(s) all purpose flour
1/2 cup(s) sugar
3 cup(s) fresh rhubarb, cut into 1/2 inch pieces
CREAM LAYER
1/2 cup(s) sugar
12 ounce(s) cream cheese (softened)
2 - eggs
1 teaspoon(s) vanilla

Steps:

  • Crust: Mix flour, sugar, and butter, just until a dough forms. Pat into a 10 inch pie plate. Set aside
  • Rhubarb Layer: Combine rhubarb, sugar, and flour. Toss lightly and pour into crust. Bake at 375 F for 15 minutes. Remove from oven. Lower oven heat to 350 F.
  • Cream Layer: (Prepare while rhubarb is baking). Beat cream cheese and sugar until fluffy (or light) Beat in eggs one at a time, add vanilla. Pour over rhubarb. Bake at 350 F for another 30 to 35 minutes.
