Red Chicken image

This a family recipe that everyone gets excited about when they hear it is planned for the week.

1 whole cut up chicken
1 large onion
14 oz pork link sausage
1 8oz can(s) tomato sauce
1 6oz can(s) mushroom steak sauce
1 8oz can(s) water, as needed
1/2 bunch fresh parsley
1 Tbsp garlic powder
1 tsp salt
1 tsp pepper
red pepper to taste
2 Tbsp vegetable oil
2 c rice

Steps:

  • 1. Dice onion, cut sausage into 1 inch pieces, chop parsley. Heat oil in pot (preferably cast iron), add chicken, brown, remove. Add sausage, brown, remove. Add onion, sauté until opaque. Add chicken and sausage back to the pan. Add tomato sauce, mushroom steak sauce, water, parsley and all seasonings. Bring to a boil, cover, simmer until chicken is done and starting to separate from the bone. Cook rice. Serve over the rice and enjoy!
  • 2. The only mushroom steak sauce that I am aware of is Dawn Fresh by Giorgio. If this is not available, you may use standard brown gravy and sauté diced mushrooms with the onions.
