Steps:
- In a large sauce pan, place 3 tbspns of EVOO. Once heated up, add garlic and red onion. Stir occasionally over 7-10 minutes. Add the whole peeled tomatoes, crushing them as you ad them. Add salt and pepper and let simmer for 15 mins. In a skillet, grill the cubed chicken until a golden brown crust forms. To the saucepan, add the sugar, sherry, sun-dried tomatoes and roasted red pepper. Simmer 10 minutes and remove from heat. Add the chicken and sour cream. Just before serving, stir in the basil. Serve over al dente penne.
