Ravioli in Tomato Basil Sauce image

Yummy and easy! Can be easily adapted for vegetarians as well! And yes, I know it is easy to just open a can of spaghetti sauce and pour over, but I always feel so much better about dinner if it is not entirely from boxes and cans! Maybe one day I can post my goat cheese ravioli recipe that goes amazing with this.

Number Of Ingredients 11

1 can(s) family size tomato soup
1 can(s) tomato paste
3 Tbsp fresh basil, chopped fine
2 clove garlic, minced
1 1/2 tsp italian seasoning
1/4 c finely diced onion
1/4 c finely diced bell pepper
1/2 c sun dried tomatoes
salt and pepper to taste
1/2 pkg frozen mini beef ravioli
1/2 pkg frozen mini cheese ravioli

Steps:

  • 1. Thaw or cook the frozen ravioli. In the meantime in a saucepan, mix the tomato soup, tomato paste, basil, garlic and seasoning. Bring to a low simmer and add onions, peppers and tomatoes. Cook on a low until the onions are soft. Taste and add salt and pepper if desired. I like this dish sweet so use it very sparingly.
  • 2. Pour over cooked ravioli and sprinkle with Parmesan cheese.
