Rabbit With Tarragon Sauce image

Golden pieces of rabbit covered in a savory herbed gravy, make this a satisfying, stick to your ribs, main dish. Tarragon provides a subtle flavor that goes very well with rabbit.

Number Of Ingredients 9

1/2 cup(s) all purpose flour
2 teaspoon(s) tarragon, dried
1 1/2 teaspoon(s) salt
1 teaspoon(s) pepper
2 - rabbits (2 to 2 1/2 pounds each) cut up
1/4 cup(s) butter (or margarine)
1/4 cup(s) cooking oil
2 cup(s) chicken broth
1/4 cup(s) parsley flakes (optional)

Steps:

  • In a resealable plastic bag, combine flour, tarragon, salt and pepper. Add the rabbit pieces, one at a time, and shake well.
  • In a large skillet,, melt butter; add oil. Saute the rabbit pieces, a few at a time, until browned
  • Add broth; cover and simmer for 50 to 60 minutes, or until tender. Thicken the pan juices if desired, and use for gravy. Pour gravy over rabbit and serve immediately. Sprinkle parsley flakes over all. (optional)
