Quick Edamame Salad image

Number Of Ingredients 12

1 package 16oz frozen SHELLED EDAMAME, thawed
1 package 16oz frozen SWEET CORN, thawed
1 package 16oz frozen SWEET PEAS, thawed
1 can 12oz BLACK BEANS, drained and rinsed
1/2 head RED ONION
1/4 cup OLIVE OIL
1/4 cup RED VINEGAR
1/2 teaspoon SALT
1/4 teaspoon PEPPER
1 teaspoon BASIL - fresh (dried - 1/4 teaspoon)
2 teaspoons PARSLEY - fresh (dried - 1/2 teaspoon)
1/4 teaspoon GARLIC POWDER

Steps:

  • Mix EDAMAME, CORN, PEAS, BLACK BEANS and RED ONION in a large bowl
  • Stir OLIVE OIL, VINEGAR, SALT, PARSLEY, BLACK PEPPER, BASIL and GARLIC POWDER into EDAMAME mixture.
  • Chill in refrigerator for at least 30 minutes before serving.
  • NOTES:
  • Defrost vegetables in the fridge so they remain cold and don't get too soggy.
