Quick Banana Wheat Germ Bread image

IF you have not prechopped your nuts and Cranberries, I would wait to preheat my oven, till that is finished. less it is cold and the extra heat is a plus. (I can be very slow.) Here in Florida, I put a much loved GE Table Top Oven outside and bake in the summers, but in the cold, I am happy to bake inside, sort of a combo of heating my home, making it smell wonderful and of course baking this quick bread. Also, I am very slow chopper of stuff, so you might be very quick.... so time to prepare is so unknown. And I do all with just a knife.... no fancy machines.

Number Of Ingredients 12

1 1/2 cup(s) all purpose flour
2 1/4 teaspoon(s) double acting baking powder
1/2 teaspoon(s) salt
1/4 cup(s) wheat germ
1/3 cup(s) unsalted butter
2/3 cup(s) sugar
3/4 teaspoon(s) grated lemon rind (opt) but recommended
2 - eggs
1 1/4 cup(s) ripe banana pulp, mashed
1/2 teaspoon(s) lemon juice
1/2 cup(s) or more broken nuts or any that you have on hand
1/4 cup(s) finely chopped apricots or fresh frozen cranberries or frozen blueberries (yummm) or leave them out?

Steps:

  • Preheat oven to 350 Have all ingredients at about 75 F Sift before measuring: 1 1/2 C all purpose flour Resift with: 2 1/4 t double acting baking powder 1/2 t salt Add: 1/4 C wheat germ
  • Blend till creamy 1/3 C shortening (I use unsalted butter) 2/3 C sugar 3/4 t grated lemon rind
  • Beat in: 2 beaten eggs 1 to 1 1/4 C ripe banana pulp 1 t lemon juice
  • Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition till smooth. Fold in 1/2 C broken nuts 1/4 C finely chopped Apricots, chopped Cranberries or?
  • Place the batter in a greased loaf or bread pan. Bake about 1 hour or till done. Cool before slicing.
