AIR FRYER BANANA BREAD



Air Fryer Banana Bread image

Baking banana bread is much quicker in an air fryer, thanks to the convection-like heat and the need for less batter. Make this round loaf your everyday breakfast go-to: The wheat germ adds a little extra fiber and whole-grain toastiness to your morning.

1/2 cup all-purpose flour
1/4 cup wheat germ or whole-wheat flour
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
2 ripe bananas
1/2 cup granulated sugar
1/4 cup vegetable oil
1/4 cup plain yogurt (not Greek)
1/2 teaspoon pure vanilla extract
1 large egg
1 to 2 tablespoons turbinado sugar, optional

Steps:

  • Spray a 7-inch round air-fryer insert, metal cake pan or foil pan with nonstick spray. Set aside.
  • Whisk together the flour, wheat germ, salt and baking soda in a medium bowl. Mash the bananas until very smooth in a separate medium bowl. Add the granulated sugar, oil, yogurt, vanilla and egg to the banana and whisk until smooth. Sift the dry ingredients over the wet and fold together with a spatula until just combined. Scrape the batter into the prepared pan and smooth the top. Sprinkle the top of the batter with the turbinado sugar if desired, for a crunchy, sweet topping.
  • Put the pan in a 3.5-quart air fryer and cook at 310 degrees F, turning the pan halfway through, until a toothpick inserted in the middle of the bread comes out clean, 30 to 35 minutes. Transfer the pan to a rack to cool for 10 minutes. Unmold the banana bread from the pan and let cool completely on the rack before slicing into wedges to serve.

⅓ cup vegetable oil
½ cup honey
1 teaspoon vanilla extract
2 eggs
1 cup mashed bananas
1 ¾ cups whole wheat flour
½ teaspoon salt
1 teaspoon baking soda
¼ cup hot water
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
  • In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into prepared pan.
  • Bake until a toothpick inserted in the center of the loaf comes out clean, 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

½ cup (1 stick or 4 ounces) unsalted butter
½ cup (3 ¾ ounces) packed light or dark brown sugar
¾ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
1 ½ cups (~ 12 ounces) mashed ripe banana (3-4 medium to large bananas)
¼ cup (3 ounces) honey (I used sugar - works fine)
2 large eggs
2 cups (8 ounces) whole wheat flour, traditional or white whole wheat (I found that 2 cups was closer to 10 ounces - guess my whole wheat is heavy)
½ cups (2 ounces) chopped walnuts

Steps:

  • Preheat oven to 350 F degrees. Lightly grease a 9 x 5 inch loaf pan.
  • Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and nuts, stirring until smooth. Spoon the batter into the prepared pan and let it rest at room temperature, uncovered for 10 minutes.
  • Bake the bread for 50 minutes. Lay a piece of foil gently across the top and bake until a cake tester (like a toothpick) inserted into the center comes out clean, 10 to 15 minutes more. Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.

This was found on the back of Roger's Wheat Germ, but I have changed the all purpose flour to whole wheat. DS has been going through some testings for Celiac and we were told to up his fibre intake. Everyone enjoys these very much.

IF you have not prechopped your nuts and Cranberries, I would wait to preheat my oven, till that is finished. less it is cold and the extra heat is a plus. (I can be very slow.) Here in Florida, I put a much loved GE Table Top Oven outside and bake in the summers, but in the cold, I am happy to bake inside, sort of a combo of heating my home, making it smell wonderful and of course baking this quick bread. Also, I am very slow chopper of stuff, so you might be very quick.... so time to prepare is so unknown. And I do all with just a knife.... no fancy machines.

  • Blend till creamy 1/3 C shortening (I use unsalted butter) 2/3 C sugar 3/4 t grated lemon rind
  • Beat in: 2 beaten eggs 1 to 1 1/4 C ripe banana pulp 1 t lemon juice
  • Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition till smooth. Fold in 1/2 C broken nuts 1/4 C finely chopped Apricots, chopped Cranberries or?
  • Place the batter in a greased loaf or bread pan. Bake about 1 hour or till done. Cool before slicing.

1 tablespoon baking powder
3/4 teaspoon salt
3/4 cup toasted wheat germ
1 1/2 cups mashed ripe bananas (about 3)
1/2 cup milk
2 large eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400°F. Line 16 muffin cups with foil muffin papers. Sift first 4 ingredients into medium bowl. Mix in wheat germ. Combine bananas, milk, eggs, oil and vanilla extract in large bowl and whisk to blend. Mix in dry ingredients. Spoon batter into prepared muffin cups, dividing equally.
  • Bake muffins until tops are golden brown and tester inserted into center comes out clean, about 25 minutes.

3/4 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup light brown sugar, packed
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup raisins
1 cup buttermilk (see directions for substitute directions)
1/4 cup butter or 1/4 cup margarine, melted
1 egg

Steps:

  • Preheat oven to 350. Spray 8x4" loaf pan with nonstick cooking spray. Measure 2 Tbsp wheat germ; set aside.
  • Combine remaining wheat germ, flours, sugar, baking soda, baking powder and salt in large bowl. Add raisins; stir until coated. Beat buttermilk, butter and egg in small bowl until blended. Stir into flour mixture. Pour into prepared pan; sprinkle with reserved 2 Tbsp wheat germ.
  • Bake 40-50 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan and cool 30 minutes on wire rack. Serve warm or at room temperature.
