This is a recipe that my friend Crystal made & it turned me fom an avocado hater into an avocado lover. Quick, easy and can be a light meal or a party appetizer.

Steps:
- 1. Mix diced avocado, drained corn, chopped cilantro and juice of 1/2 lemon in a bowl. Allow to sit for 5 minutes. Note: You can also add salt / pepper to taste if desired.
- 2. Eat alone or serve with tortilla chips or pita bread.
