Quick and Easy Waffles image

I wanted a recipe where I could incorporate some whole wheat benefits while keeping the flavor and texture of traditional waffles The mix is great to make ahead and keep in the fridge. I made some simple changes to a basic pancake recipe and got a hit. My family eats these with syrup, bananas and brown sugar and even ice cream and chocolate syrup. Enjoy!

1 cup all-purpose flour
1 cup whole wheat flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar or 1 tablespoon artificial sweetener
1 1/2 cups milk
1 teaspoon pure vanilla extract
4 tablespoons vegetable oil
2 large eggs, separated

Steps:

  • Preheat waffle iron.
  • In a large mixing bowl, sift together the dry ingredients. Stir in milk, oil, vanilla and egg yolks until mixture is smooth and there are no lumps.
  • Using a separate bowl, whip the egg whites until peaks form.
  • Fold the egg whites into batter.
  • Spray the preheated waffle iron with non-stick cooking spray and pour about a 1/3 cup of mix onto the hot waffle iron. Cook until no more steam is released and waffles are golden.
  • Serve hot with fruit and fresh whipped cream.
