PAN ROASTED CORN AND TOMATOE SALAD image

1/4 lb chopped bacon
1 small red onion chopped
4-6 ears of corn. stripped (2-3 cups
juice of 1 lime
2 C cored and chopped tomatoes
1 medium ripe avocado chopped
2 small fresh chiles like Thai and seeded
1/2 C cilantro chopped

Steps:

  • cook bacon until crisp: remove with slotted spoon cook onion and corn in bacon grease until soft about 8 minutes cook a bit more until corn browns and then remove from heat and cool. you can remove fat if you wish put lime juice in large bowl.
