Pulled ham & maple mustard slaw image

Crunchy red cabbage, studded with juicy apricots and drizzled with tangy maple mustard dressing. A colourful lunch or satisfying side salad

Number Of Ingredients 10

2 tsp rapeseed oil
1 tbsp sherry vinegar
¼ tsp wholegrain mustard
2 tsp maple syrup
⅓ small red cabbage , shredded
6 ready-to-eat dried apricots , cut into strips
1 banana shallot, chopped
6 walnut halves , broken into pieces
2-3 tbsp roughly chopped parsley
100g piece of ham , pulled into pieces

Steps:

  • Mix the oil, vinegar, mustard and maple syrup in a bowl. Stir in the cabbage, apricots, shallot, walnuts and parsley. Toss well, then gently fold the ham through.
