GREEK SPAGHETTI WITH TOMATOES AND FETA image

2 teaspoons olive oil
1 teaspoon dried oregano
1 clove garlic, minced
3 cups tomatoes, diced
1/2 cup green onions, sliced
1/2 cup black olives, chopped
14-ounce artichoke hearts, sliced
2 tablespoons fresh parsley, chopped
2 tablespoons lemon juice
4 cups thin spaghetti, cooked
3/4 cup feta cheee
2 tablespoons fresh parsley
1/4 cup feta cheese
freshly ground pepper
toasted pine nuts

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Add oregano and garlic and saute 30 seconds. Add tomatoes, onions, 2 tablespoons parsley, olives, artichokes and lemon juice; cook 2 minutes or until heated through. Combine tomato mixture with spaghetti and 3/4 cup feta cheese; toss gently. Season with pepper. Top with remaining 1/4 cup feta and 2 tablespoons parsely. Sprinkle with pine nuts.
