Potatoes Hashed In Cream image

Potatoes are my favorite side dish & there are sooooo many different recipes to enjoy! Inspired by: www.cookscountry.com

Number Of Ingredients 3

2 1/2 pound(s) yukon gold potatoes, peeled & cut into 1/2" pieces
1 cup(s) heavy cream
- salt & pepper, to taste

Steps:

  • Over medium high heat bring your potatoes, cream & 1 1/4 tsp to a boil in 12" nonstick skillet. Cover and reduce heat to medium low. Simmer until the potatoes are just about tender (approximately 10 minutes). NOTE: You'll definitely want to use a nonstick skillet here.
  • Next, remove the lid, increase heat to medium high & cook stirring occasionally, until liquid evaporates & potatoes are well browned, approximately 15 - 20 minutes. Season to taste with salt & pepper & serve. NOTE: To insure that your potatoes will brown, once you remove the lid, give them a stir (no more than 5 or 6 times).
