Steps:
- Over medium high heat bring your potatoes, cream & 1 1/4 tsp to a boil in 12" nonstick skillet. Cover and reduce heat to medium low. Simmer until the potatoes are just about tender (approximately 10 minutes). NOTE: You'll definitely want to use a nonstick skillet here.
- Next, remove the lid, increase heat to medium high & cook stirring occasionally, until liquid evaporates & potatoes are well browned, approximately 15 - 20 minutes. Season to taste with salt & pepper & serve. NOTE: To insure that your potatoes will brown, once you remove the lid, give them a stir (no more than 5 or 6 times).
