Potatoes and Onions image

Cubed potatoes over onions, mushrooms and celery. For an extra zip sprinkle vegan Parmesan cheese and oregano on top of the dish!

Number Of Ingredients 5

3 potatoes, cubed
ΒΌ cup fat free Italian-style dressing
2 cups fresh sliced mushrooms
1 onion, finely diced
2 stalks celery, chopped

Steps:

  • Place potatoes in a pot of boiling water until tender. Drain well.
  • Spray a frying pan with non-stick cooking spray and pour in dressing. Over a medium heat fry the mushrooms, onions and celery. When cooked to your desired texture pour the mixture over the potatoes. Serve hot.
