POTATO-TOPPED COD image

Yield 4 servings

Number Of Ingredients 12

1/2 cup butter
4 waxy potatoes, sliced
1 lg onion, finely chopped
1 tsp whole grain mustard
1 tsp garam masala
pinch of chili powder
1 TBS fresh dill
1 1/4 cup fresh bread crumbs
4 cod fillets, ~ 6 oz. each
1/2 cup grated swiss cheese
salt and pepper
fresh dill sprigs to garnish

Steps:

  • 1) Melt 1/2 of the butter (2 TBS) in a skillet. Add potatoes and fry for 5 mins., turning until they are brown all over. Remove potatoes from pan with slotted spoon. 2) Add rest of butter (2 TBS) and stir all the dry ingredients, dill. and bread crumbs. Cook for 1-2 min, stirring well. 3) Layer 1/2 of potato slices in the base of a baking dish and place cod on top. Cover cod with rest of potatoes. Season to taste with salt and pepper. 4) Spoon the spicy mixture from the skillet over the potatoes and sprinkle with cheese. 5) cook in preheated oven @ 400 for 20-25 mins, or unti ltopping is golden brown and cod is cooked through. Garnish with dill sprigs and serve.
