Chicken Spinach Stroganoff image

This recipe was a delicious twist on stroganoff, and a lot lighter. Plus the added spinach makes it a one pot meal! We served our over whole wheat wide egg noodles.

Number Of Ingredients 9

4 medium chicken breast halves, skinless and boneless
1/4 teaspoon(s) salt
1/4 tablespoon(s) garlic pepper
8 ounce(s) cremini mushrooms, sliced
1 small onion, chopped
2 clove(s) garlic, minced
1 can(s) cream of mushroom soup
1 cup(s) non-fat plain greek yogurt
4 ounce(s) fresh baby spinach

Steps:

  • Put everything in the slow cooker, but the spinach and yogurt.
  • Cook on high for 3 hours or low for 6 hours.
  • Loosely break the chicken into serving size pieces and turn the slow cooker off and add yogurt and spinach.
  • Serve over noodles.
