Potato Croquettes

Provided by Eat Good 4 Life

Number Of Ingredients 12

1.5 lb potatoes
1/4 cup milk
1/4 cup Land O Lakes® Salted Butter
3/4 teaspoon salt
1-2 cloves garlic, minced
2 carrots, finely chopped
1 red bell pepper, finely chopped
1 cup fresh parsley
1/2 teaspoon salt
2-3 teaspoon olive oil
2 eggs
2 cups Panko bread crumbs

Steps:

  • Boil potatoes until tender, about 15 minutes. Drain potatoes and let them cool. Peel potatoes and add to a large mixing bowl. Mash potatoes with milk, butter, and salt. Set aside.
  • Add olive oil to a non-stick pan. Add the carrots, peppers and garlic. Cook for 2-3 minutes until they soften, 2-3 minutes. Add the vegetable mixture to the potatoes and mix until combined. At this time you can preheat your oven to 450F.
  • Measure out approx. 2 tbsp of potato mixture, roll it into a ball and flatten into a patty. Arrange patties on parchment paper.
  • Place panko bread crumbs in a plate and bitten egg on another. Dip each croquette on the egg followed by the panko break crumbs. Place them back into the prepared baking pan already breaded.
  • Bake croquettes for 10 minutes on each side. Serve while they are still warm.
