POTATO CAKE WITH TART APPLES AND JARLSBERG image

Number Of Ingredients 9

1/4 c. olive oil
8 medium potataoes, peeled and thinly sliced
2 medium Granny Smith apples, cored and thinly sliced
1 medium onion, thinly sliced
1/2 c. chopped fresh parsley
1-1/4 tsp salt
1/2 tsp pepper
3/4 c. finely grated Jarlsberg
butter for greasing foil

Steps:

  • 1. Preheat oven to 425. Coat insite of 12 in skillet with olive oil. 2. Toss potatoes, apples, onion, parsley, salt and pepper. Spread 1/2 in skillet, scatter with cheese, then top with remaining potato mixture. cover with piece of lightly buttered foil and bake for 40 minutes 3. Remove foil and continue to bake until potatoes are tender and top is slightly browned, about 20 minutes more. 4. Increase oven heat to broil and cook until top begins to crisp about 2 minutes. 5. Cool slightly before serving.
