PORK TENDERLOIN, CUMIN AND CORNMEAL COATED image

Pork tenderloin (.8 lb)
2 Tb Cornmeal (blue preferred)
1 Tb cumin seeds, toasted & coarsely ground
1 1/2 Tsp olive oil

Steps:

  • Preheat convection oven to 350F Pat Pork dry, season S&P Stir Cornmeal and Cumin together on a large plate. Roll Pork in Cornmeal mixture to coat well. Heat oil in 10 inch nonstick skillet until hot and brown Pork, turning, ~ 3 minutes. Transfer Pork to shallow baking dish and roast. [Let stand, loosely covered, for 10 min after cooking]
