Pork Stew Crock pot style image

With the cold weather settled in, I love to make soups and stews. I decided to make a pork stew but didn't want the same everyday stew, so I experimented and wow... This stew is awesome and so easy. Enjoy!

Number Of Ingredients 15

1 1/2 lb pork loin, boneless (cut into bite size chunks)
2 Tbsp olive oil, light
8 oz mushrooms, fresh, sliced
5 stalk(s) celery(slice stalk length wise, then cut into small pieces)
2-3 large potatoes, (i used red)
2 pkg onion soup mix, dried
1 can(s) cream of chicken soup, (10.3 ounce size)
1 can(s) tomato soup (10.3 ounce size)
2 tsp chicken base
6 c water
2 c carrots, sliced
1 bag(s) mixed vegetables (frozen, 1 lb size)
1/8 tsp salt if desired
1/8 tsp pepper if desired
1 Tbsp brown sugar, lightly packed

Steps:

  • 1. Turn crockpot to cooking 5-6 hours or on high for 3 then low for another 3 hours.
  • 2. In a medium size frying pan, add olive oil, heat oils then add pork chunks, salt and pepper, and garlic. Cook on low- medium until browned.
  • 3. In crock pot, add onion dry soup mix, cream of chicken, and tomato soup. Mix well. Add carrots, mushrooms, celery, mixed vegetables, and potatoes.
  • 4. After meat is browned, dump into crock pot. Pour the water into the frying pan (this gets the remaining flavors from the meat) and heat to boiling, adding chicken base. Once base is dissolved, pour water mixture into crockpot.
  • 5. Mix all ingredients. Cover and let cook. Secret to a crockpot... keep the lid closed. Enjoy!
