Pork roast with potatoes and carrots image

Meat so tender it almost melts in your mouth mmmmmm, says family.

Number Of Ingredients 6

2-3 lb - boneless pork roast
12 - red potatoes cut in half
1 package(s) baby carrots
1 cup(s) olive oil, extra virgin
2 tablespoon(s) mccormics perfect pinch or mrs dash seasoning
1/2 teaspoon(s) minced garlic

Steps:

  • Mix olive oil with seasoning and garlic. Put veggies in crock pot and toss with 1/2 olive oil mixture, place roast on top of veggies, rub roast all over with remaining olive oil mixture. No need to add additional liquid, as natural juices from roast is enough.
  • put lid on crock pot and set on high for 6-7 hrs, till roast is fork tender.
