SEARED TILAPIA WITH PINEAPPLE /CUCUMBER RELISH image

Number Of Ingredients 10

1C white rice
2 Tbsp lime juice
1 Tbsp grated ginger
2 tsp honey
2 Tbsp plus 1 tsp EVOO
Kosher salt and pepper
2 scallions, thinly sliced
1 small English cucumber, cut into small pieces
1/2 pineapple, cut into small pieces
4 6-oz tilapia fillets

Steps:

  • In large bowl, whisk together lime juice, ginger, honey, 2 Tbsp oil, and S/P. Toss with the scallions, pineapple, and cucumber. Heat the remaining tsp oil in large skillet over medium heat. Season the tilapia with S/P and cook until golden brown (1-3 mins per side) Serve the fish with rice and relish.
