Pork Long Rice image

Number Of Ingredients 10

2 pounds Pork Spare Ribs
1 package Bean thread noodles
1 Onion, halved and sliced
5 Large Mushrooms, thin sliced
2 Bok Choy, sliced
1 Mint, Cilantro, Basil
2 tablespoons Fresh ginger, peeled and julienned
1/4 cup Soy sauce
1 tablespoons Sriracha
1 Salt and Pepper

Steps:

  • Boil pork in water with salt and pepper.
  • Remove pork when tender, thin slice, then return to pot.
  • Add onions, mushrooms, ginger and soy sauce. Simmer.
  • Place bean thread noodles in a bowl, cover with boiling water and let sit for 15-20 minutes, then drain and add to pot.
  • Noodles will be very long-cut to shorter length if desired.
  • Add bok Choy and fresh herbs and season to taste.
  • Serve in bowls.
