Pork Chucks in Tomatillo Salsa image

My boyfriend love his pork as much as I do.. And he loves Verde salsa, So I decide to combine it with potatoes and carrots.. Of course he took out all the carrots but one..ha ha I guess one is better then none.. Also this is such I easy Crock Pot recipes.

2 pound(s) pork chucks
1 can(s) verde salsa or enchilada sauce
3 cup(s) potatoes, cooked
1 cup(s) carrots, chopped
1 teaspoon(s) white peppercorns

Steps:

  • Prepare pork by trimming any extra fat. Rinsed off and pat dry; add to the crock pot. Add the Verde sauce, Can of water, white peppercorns cook on high heat for 4 hours.
  • Meanwhile peel and chop potatoes and carrots, set in a water bath to take out all starch from the potatoes. Why? To have a nice clear broth.( If t was beef stew I would keep i in to have a thicker and heavier broth, but in this stew. I like the taste of the Verde) Place the potatoes and carrots in the water into the fridge until the last hour. Once it 4 hours,drain and rinse the veggies;add to the meat mixture ad cook for additional hours or until the potatoes are fork tender.
