2 kilos/4.4lbs pork
1 kilo/2.2lbs onions, chopped
1 tbsp. achuete
10 pcs. calamansi, extracted
5 tbsps. brown sugar
5 cups soy sauce mixed with water
dried laurel leaves

Steps:

  • Combine all ingredients and marinade meat overnight. Remove meat from marinade sauce. Drain meat well. Fry meat until golden brown. Pour remaining marinade mixture then cook low-fire until meat is very tender.
