I got my hands on this recipes 17 years ago and it is the most requested by my friends for me to bring to gatherings. The flavors are amazing and as you make it more you find your own little twists on the recipe to personalize it to your liking. Absolutley my favorite by far.

Number Of Ingredients 12

1 pound(s) tri colored spiral macaroni, cooked and drained
3 medium tomatoes, diced and seeded
1 pound(s) cheddar cheese cubed
1 to 2 bunch(es) green onions, sliced
3 ounce(s) sliced pepperoni
3/4 cup(s) vegetable oil
2/3 - grated parmesan cheese
1/2 cup(s) red wine vinegar
2 teaspoon(s) dried oregano
1 teaspoon(s) garlic powder
1 teaspoon(s) salt
1/4 teaspoon(s) pepper

Steps:

  • In a large bowl, combine macaroni, tomatoes, cheddar cheese, green onions and pepperoni. In a small bowl, combine oil, Parmesan cheese, vinegar and seasonings: pour over macaroni mixture. Cover and refrigerate for several hours.
  • When I make this dish for the cheese I use 1/2 pound pepper jack cheese and 1/2 pound of pepperoni cheddar cheese. It gives the dish a nice flair. Also I make a double batch of the the dressing ~ I find the noodles absorb the dressing rather quickly this was I am able to add more when needed. If any left over makes a great salad dressing.
