1/4 cup pepperoni slice, plus more for topping
1 1/2 lbs ground beef
1 (13 ounce) jar pizza sauce
1 cup Italian seasoned breadcrumbs
1 egg, beaten
1 small bell pepper, finely diced
1/2 yellow onion, finely diced
2 garlic cloves, minced
1/2 teaspoon salt
pepper
1 cup shredded mozzarella cheese
red pepper flakes, for garnish
chopped parsley, for garnish

Steps:

  • Preheat oven to 375°F.
  • Line the bottom of an 8-inch spring form pan with parchment paper and spray with nonstick spray. Wrap the bottom and sides with a piece of aluminum foil and place on a sheet pan.
  • Coarsely chop the pepperoni slices and add to a large bowl. Add the ground beef, 1 cup pizza sauce, bread crumbs, egg, bell pepper, onion, garlic, salt and a few grinds of pepper.
  • Mix to combine and transfer to the prepared cake pan.
  • Spread the remaining pizza sauce on top of the meatloaf.
  • Bake for 45 minutes.
  • Remove from oven and top with shredded mozzarella and pepperoni slices.
  • Bake for 15 minutes or until cheese is melted.
  • Let cool for 5 minutes in the pan before removing from the mold.
  • Garnish with red pepper flakes and chopped parsley.
